Ever wanted a really comprehensive grounding in all the main cooking techniques a good home cook is ever likely to need? This 3-day course has been designed to cover skills and techniques that will allow you to ‘cook with confidence’ when trying out new recipes. The course will be over 3 consecutive Sundays and include skills, techniques and recipes on meat, seafood, stocks, soups, sauces, vegetables, breads, desserts amongst others.

The course has been designed to be accompanied by online videos and cookbooks that you will, once the course has finished, still be able to use and learn from. It also includes the opportunity to gain certification in food safety and health & safety. We will make sure each individual/couple has their own work station to practice at.

WHAT YOU CAN EXPECT/RECIPIES:
Week 1 (Sunday 26 September): Knife skills, Health and Hygiene, Stocks, Soups, Sauces, dressings, Meat preparation, potato cooking.
Week 2 (Sunday 3 October): Fish and shellfish preparation, grain cooking, pasta & noodles, vegetable cooking.
Week 3 (Sunday 10 October): Bread, Pastry, Baking & Desserts.

Focaccia & Grissini
Harrogate Blue cheese tortellini with pumpkin velouté
Cheese soufflés with apple, walnut and pomegranate salad
Duck Confit, Cassoulet, Pomme de Terre Boulangère, Petite Pois en Francaise
Moules Marinieres with homemade soda bread
Bouillabaisse
Seabass Viennoise with Basil Emulsion
Choux Pastry – Chocolate Eclairs
Tart Au Citron
Vanilla panna cotta with rhubarb & ginger.

WHERE: Blackfriars Cookery School

TIMES: 11.00am to 4.30pm over 3 consecutive Sundays. Please note; you must be able to attend all sessions. 

COST: £295 per person which includes tea, coffee & water throughout the day, a Sunday brunch on arrival in the Cookery School, apron and recipes to take home on completion of the course, online recipes sent to you, access to online videos, Level 2 Food Safety certification, Level 2 Health & Safety certification, smaller classes for better learning. Payment upon booking. Places are only confirmed once paid in full and are non-refundable or transferable.

WHAT TO BRING: Flat soled shoes, Long trousers and a long-sleeved top are advisable. Also wear clothes you don’t mind getting covered in flour. A notebook & pencil and containers to take your food away in. Otherwise, just bring your enthusiasm!

TICKETS & VOUCHERS: please note although we don’t send out physical tickets, you will receive a confirmation from our on-line booking system (note: this will state a table has been booked).
