Andy & Molly's Lasagne

This week, Andy has been making Lasagne with his daughter Molly as it's her favourite dish.  Here's how they made it:

Bolognaise sauce
1 onion, finely diced
1 tbsp cooking oil
100g streaky bacon - chopped
1 tsp fennel seeds
1-2 cloves of garlic
700g minced beef
2 tbs tomato puree
1 tin of tomatoes
Veg - carrots, courgette or anything else you can get away with
Large dash of Hendersons relish

50g butter
50g plain flour
1 ltr of warm milk
1tsp ground nutmeg
350-400g mature cheddar (also use other strong cheeses like parmesan)

300g fresh lasagne pasta (egg) or dried

How to make it the bolognaise sauce
Heat the oil
Fry the onion and bacon on a medium heat for a few minutes
Add fennel seeds, garlic for 2 mins then add the mince
Add tomato puree then after 5 mins add  veg and Hendersons relish

To make the roux
Add the butter to a low to medium heat pan
When melted, add the flour and continuously whisk for 1 minute
Add the ground nutmeg then slowly add the warm milk
After 5-7 mins, take off the heat and add the cheese

To assemble
Add a a layer of bolognaise then roux then pasta sheets
Repeat 3-4 layers or until the mixture is finished
Finish with a layer of roux

Bake in a midium-hot oven (around 180)  for 30-45 minutes
