Advanced Domestic Butchery Masterclass

Ever wanted to take your butchery skills to the next level? We’ll take you through more advanced skills and how to instinctively know where and how to butcher each joint of meat. Learn how to make the most of your meat including the less used cuts, why some cuts are better slow-cooked whilst others should be quickly seared.  Enjoy a fun day with like-minded people and learn a new skill for life! Each student will have their own work station, equipment and ingredients to work with. These courses are designed to be relaxed, informative and fun.

What to expect: participate in tunnel boning a chicken, French trimming a chicken, French trimming a rack of lamb, watch a demonstration of leg deboning. Partake in Steak identification and cooking, Sausage/Haggis making, Dry Aging, Curing, Brining, Marinating.

COOKERY LEVEL: Intermediate/intermediate +  (see further information here).
WHERE: Blackfriars Cookery School

TIMES: 9.30am to 4.30pm 

COST: £145 per person which includes refreshments throughout the day, a communal lunch with wine and coffee in the Cookery School, your own filleting knife, apron and recipes to take home. Places are only confirmed once paid in full and are non-refundable or transferable.

FRIENDS & FAMILY: are welcome to join the participants for a three course lunch, 2 glasses of wine and coffee for just £35 per person (limited availability).

WHAT TO WEAR: Aprons are provided though please arrive in comfortable clothes that you don’t mind getting a bit messy.
