Regional Italian Cookery

With influences from all over the world, a country that didn’t unify until the 19th century is still, today, very diverse and regional in its cuisine. Before France got its, well deserved reputation, as the gastronomic centre of the world; Italy was the place to be. Italian regional food is so much more than pizza and pasta (that’s a different workshop) during this session we will look at regions all over the country and show the differences from the rich, German influenced far north to the hot, poor, North African influenced south stopping off in Tuscany and Lazio on the way. So, come and join us for a real eye-opening Italian gastronomic tour. Each student will have their own work station, equipment and ingredients to work with.

COOKERY LEVEL: Beginners to Intermediate (see further information on cookery levels here). 

Expect recipes like: Antipasto – Tuscany – crostini di fegatini, Campania – Fava stufate al cacio, Primo – Veneto – Polenta conzada, Secondo – Sicily – Coniglio all’agrodolce, Contorno – Emilio Romagna – Finocchi gratinate, Lazio – Cipollini agrodolce, Basilicata – Patate con diavolicchio, Dolce – Sardinia – Dolce di ricotta.

WHERE: Blackfriars Cookery School

TIMES: 9.30am to 4.30pm 

COST: £145 per person which includes refreshments throughout the day, a communal lunch with wine, regional beverage and coffee in the Cookery School, your own apron and recipes to take home. Places are only confirmed once paid in full and are non-refundable or transferable.

FRIENDS & FAMILY: are welcome to join the participants for a student made irresistible Italian lunch, 2 glasses of wine and coffee for just £35 per person (SOLD OUT).

LUNCH: 3.00pm

WHAT TO WEAR: Aprons are provided though please arrive in comfortable clothes that you don’t mind getting a bit messy.
