DOMESTIC BUTCHERY MASTERCLASS

Event Description

Ever wondered how to perfectly portion a chicken or properly prepare a rack of lamb or pork ribs? We’ll take you through the basics and how to instinctively know where and how to butcher each joint of meat. Learn how to make the most of your meat, why some joints are better slow-cooked whilst others should be quickly seared.  Enjoy a fun day with like-minded people and learn a new skill for life! Each student will have their own work station, equipment and ingredients to work with. These courses are designed to be relaxed, informative and fun.

EXPECT TECHNIQUES SUCH AS:

+ Basic Chicken Butchery and Preparation

+ The Art of Chicken Stock

+ The Science of Marinating

+ Barbecue Traditions (Oven-Smoked Pork Ribs, Brisket, Short Ribs)

+ Trimming/Preparing a Rack of Lamb

+ Intro to Lean:Fat Ratios – The Perfect Burger

WHERE: Blackfriars Cookery School

TIMES: 9.30am to 4.30pm

COST: £160 per person which includes refreshments throughout the day, a communal lunch with wine and coffee in the Cookery School, your own filleting knife, apron and recipes to take home. Payment upon booking. Places are only confirmed once paid in full and are non-refundable or transferable

WHAT TO BRING: Aprons are provided though please arrive in comfortable clothes that you don’t mind getting a bit messy. Otherwise, just bring your enthusiasm!
